- 1 cup dark chocolate (at least 60% cacao)
- 1/2 cup shelled, unsalted pistachios
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- A pinch of salt
Instructions
- Preheat the oven to 350°F (175°C) and prep two round cake pans with parchment paper.
- Melt dark chocolate using a double boiler or microwave and let it cool slightly.
- Whisk together flour, baking powder, and salt in a bowl.
- In a large mixing bowl, beat the butter and sugar until light and fluffy, about 3-5 minutes.
- Add the eggs one at a time and then mix in the vanilla.
- Gradually add the melted chocolate to the batter, mixing until just combined.
- Incorporate dry ingredients into the wet, alternating with milk if using, and gently stir in chopped pistachios.
- Divide batter into the pans and bake for 25-30 minutes or until a toothpick comes out clean.
- Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
- Frost with cream cheese frosting, if desired, and garnish with additional pistachios.
Notes
Ensure all ingredients are at room temperature for best results. Don’t overmix once the flour is added to keep the cake light.
