Instructions
- Prepare the Dough: Cream together the softened unsalted butter and granulated sugar until light and fluffy. Add the eggs one at a time, then mix in cocoa powder and flour until well combined.
- Chill the Dough: Wrap the dough in plastic and refrigerate for at least 30 minutes.
- Preheat Your Oven: While the dough chills, preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Shape the Cookies: Scoop tablespoon-sized portions of chilled dough and roll into balls; place them on the baking sheet.
- Create the Thumbprints: Use your thumb or the back of a spoon to create an indentation in each cookie.
- Bake: Bake for about 10-12 minutes, until set but not overbaked.
- Make the Ganache: Heat heavy cream until just about to boil, pour over chopped dark chocolate, let sit, then stir until smooth.
- Fill the Cookies: Once cookies have cooled, fill each thumbprint with ganache and allow to set before serving.
- Enjoy: Serve at room temperature.
