Description

A delightful cheesecake featuring a cinnamon sugar churro crust and creamy filling, perfect for Thanksgiving gatherings.

Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 1 tsp ground cinnamon
  • 2 (8 oz) packages cream cheese, softened
  • ¾ cup granulated sugar
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 3 large eggs

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, sugar, and cinnamon. Press into the bottom of a springform pan and bake for 10 minutes.
  3. Beat the cream cheese until smooth. Gradually add sugar, then mix in vanilla and sour cream until combined.
  4. Incorporate the eggs one at a time, mixing just until combined.
  5. Pour the filling over the crust and smooth the top.
  6. Bake for 55-60 minutes until edges are set and the center has a slight jiggle.
  7. Cool at room temperature for 1 hour, then refrigerate for at least 4 hours or overnight.
  8. Before serving, sprinkle with cinnamon sugar.

Notes

Ensure all ingredients are at room temperature before mixing to prevent lumps. Consider using a water bath for a smoother texture.
