Instructions
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, combine graham cracker crumbs, melted butter, sugar, and cinnamon. Press into the bottom of a springform pan and bake for 10 minutes.
- Beat the cream cheese until smooth. Gradually add sugar, then mix in vanilla and sour cream until combined.
- Incorporate the eggs one at a time, mixing just until combined.
- Pour the filling over the crust and smooth the top.
- Bake for 55-60 minutes until edges are set and the center has a slight jiggle.
- Cool at room temperature for 1 hour, then refrigerate for at least 4 hours or overnight.
- Before serving, sprinkle with cinnamon sugar.
