Ingredients

  • 1 cup almonds, toasted and finely chopped
  • 1 cup sweetened shredded coconut
  • 1 cup condensed milk
  • 1 teaspoon vanilla extract
  • Optional: cocoa powder for dusting

Instructions

  1. Begin by toasting the almonds in a skillet over medium heat until golden brown and fragrant. Allow them to cool before chopping finely.
  2. In a mixing bowl, combine the finely chopped almonds, shredded coconut, and condensed milk. Add the vanilla extract and stir until well combined.
  3. Cover the bowl and refrigerate the mixture for about 30 minutes to 1 hour until firm enough to handle.
  4. Once chilled, take small portions of the mixture and roll them into bite-sized balls.
  5. If desired, roll each truffle in cocoa powder or shredded coconut to coat completely.
  6. Place the truffles on a parchment-lined tray and refrigerate again until firm. Serve chilled and enjoy!
