- 3 cloves garlic, minced

- 2 cups canned diced tomatoes
- 1 cup canned black beans, rinsed and drained
- 1 cup corn (canned or frozen)
- 4 cups chicken broth (or vegetable broth)
- 1 cup heavy cream
- 2–3 tablespoons taco seasoning
- Salt and pepper to taste
- Cheddar cheese, for serving
- Sour cream, for serving
- Fresh cilantro, for garnish
Instructions
- In a large pot, heat a bit of oil over medium heat. Add diced onions and cook until translucent, about 5 minutes. Stir in minced garlic and cook until fragrant.
- Add the ground meat to the pot, breaking it up as it cooks. Season with salt and pepper and brown thoroughly.
- Mix in diced bell peppers, corn, and black beans, sautéing for an additional 2-3 minutes until tender.
- Pour in canned tomatoes and broth, stirring to combine. Let simmer for about 10 minutes.
- Lower the heat and gently stir in the heavy cream, allowing the soup to become creamy.
- Adjust seasoning with taco seasoning; add more if desired.
- Ladle the soup into bowls and serve with toppings like cheese, sour cream, and cilantro.
