Ingredients

  • 2 pounds Yukon Gold potatoes
  • 4 cloves fresh garlic, minced
  • 1/4 cup olive oil
  • 1 tablespoon fresh rosemary or thyme, chopped
  • Sea salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. Wash the potatoes and place them in a large pot. Cover with cold, salted water and bring to a boil. Cook until fork-tender, about 15-20 minutes.
  3. Drain the potatoes and let them cool briefly.
  4. On a baking sheet lined with parchment paper, smash each potato until flattened but intact.
  5. Drizzle olive oil over the smashed potatoes, sprinkle with garlic, herbs, salt, and pepper.
  6. Bake for about 25-30 minutes, flipping halfway through, until golden brown and crispy.
  7. Remove from oven and let cool slightly before serving.

Notes

For an even more intense garlic flavor, consider roasting the garlic before adding it to the potatoes.
