Ingredients

- 2 pounds Yukon Gold potatoes
- 4 cloves fresh garlic, minced
- 1/4 cup olive oil
- 1 tablespoon fresh rosemary or thyme, chopped
- Sea salt, to taste
- Black pepper, to taste
Instructions
- Preheat your oven to 450°F (230°C).
- Wash the potatoes and place them in a large pot. Cover with cold, salted water and bring to a boil. Cook until fork-tender, about 15-20 minutes.
- Drain the potatoes and let them cool briefly.
- On a baking sheet lined with parchment paper, smash each potato until flattened but intact.
- Drizzle olive oil over the smashed potatoes, sprinkle with garlic, herbs, salt, and pepper.
- Bake for about 25-30 minutes, flipping halfway through, until golden brown and crispy.
- Remove from oven and let cool slightly before serving.
Notes
For an even more intense garlic flavor, consider roasting the garlic before adding it to the potatoes.
