Ingredients

  • 1 package frozen hashbrowns
  • 8 large eggs
  • 1 cup whole milk
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup chopped onions
  • 1 cup chopped bell peppers
  • Salt and pepper to taste
  • Fresh herbs (parsley or chives) for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté chopped onions and bell peppers in olive oil over medium heat until soft.
  3. In a large bowl, mix hashbrowns, sautéed vegetables, eggs, milk, half of the cheese, salt, and pepper.
  4. Lightly grease a 9×13 inch baking dish and pour the mixture evenly.
  5. Top with remaining cheese.
  6. Bake for 45-50 minutes until bubbly and golden.
