Ingredients

  • 6 cups Chicken or vegetable broth
  • 4 tablespoons Soy sauce
  • 2 tablespoons Sesame oil
  • 3 cloves Garlic, minced
  • 1 inch Ginger, minced
  • 1 cup Mushrooms (shiitake or button)
  • 1 cup Bok choy or spinach
  • 2 Green onions, sliced
  • 1 tablespoon Rice vinegar
  • Black pepper to taste

Instructions

  1. Prepare the Gyoza: If making your own, prepare the filling with ground meat, vegetables, garlic, and ginger. Fill and seal gyoza wrappers.
  2. Sauté Aromatics: Heat sesame oil in a large pot over medium heat. Add minced garlic and ginger and sauté until fragrant, about 1 minute.
  3. Add Broth: Pour in the broth, stir in soy sauce and rice vinegar, and bring to a gentle simmer.
  4. Incorporate the Gyoza: Gently add the gyoza, cooking for 5-7 minutes until they float to the surface.
  5. Add Vegetables: Stir in bok choy or spinach, allowing them to wilt as the gyoza finish cooking.
  6. Taste and Adjust: Sample the soup and add more soy sauce or black pepper if desired.
  7. Serve and Enjoy: Ladle the soup into bowls, garnishing with green onions and a drizzle of sesame oil.

Notes

For added flavor, consider using homemade broth. Leftovers can be stored in the fridge for up to three days.
