A healthier take on the classic Chicken Parmesan, this recipe combines tender chicken, zesty marinara, and gooey cheese for a family favorite that brings joy to the table.


Ingredients

  • 2 Boneless Chicken Breasts
  • 1 cup Marinara Sauce
  • 1 cup Part-Skim Mozzarella Cheese
  • ¼ cup Freshly Grated Parmesan Cheese
  • ¼ cup Fresh Basil
  • 2 cloves Fresh Minced Garlic
  • 1 cup Breadcrumbs (whole wheat or gluten-free)
  • 2 tbsp Olive Oil

Instructions

  1. Preheat the oven to 375°F (190°C). Season the chicken breasts with salt, pepper, and minced garlic.
  2. Dredge the chicken by dipping it in a mixture of breadcrumbs and Parmesan. Add dried Italian herbs to the breadcrumb mixture if desired.
  3. Heat olive oil in a skillet over medium heat and sauté the breaded chicken for 3-4 minutes on each side until golden brown.
  4. Place the chicken in a baking dish, spoon marinara sauce on top, sprinkle with mozzarella and a dash of dried basil.
  5. Bake for 20 minutes or until the cheese is bubbly and golden.
  6. Garnish with fresh basil leaves before serving.

Notes

For extra moisture, cover the chicken with aluminum foil during the first half of baking. This dish can be served with a side of steamed broccoli or a salad.
