- 2 Boneless Chicken Breasts
- 1 cup Marinara Sauce
- 1 cup Part-Skim Mozzarella Cheese
- ¼ cup Freshly Grated Parmesan Cheese
- ¼ cup Fresh Basil
- 2 cloves Fresh Minced Garlic
- 1 cup Breadcrumbs (whole wheat or gluten-free)
- 2 tbsp Olive Oil
Instructions
- Preheat the oven to 375°F (190°C). Season the chicken breasts with salt, pepper, and minced garlic.
- Dredge the chicken by dipping it in a mixture of breadcrumbs and Parmesan. Add dried Italian herbs to the breadcrumb mixture if desired.
- Heat olive oil in a skillet over medium heat and sauté the breaded chicken for 3-4 minutes on each side until golden brown.
- Place the chicken in a baking dish, spoon marinara sauce on top, sprinkle with mozzarella and a dash of dried basil.
- Bake for 20 minutes or until the cheese is bubbly and golden.
- Garnish with fresh basil leaves before serving.
Notes
For extra moisture, cover the chicken with aluminum foil during the first half of baking. This dish can be served with a side of steamed broccoli or a salad.
