- 1 cup ground almonds or hazelnuts
- 1 cup raspberry jam
- Powdered sugar, for dusting
Instructions
- Prepare the Dough: In a large mixing bowl, cream together the softened unsalted butter and sugar until light and fluffy, about 3-4 minutes.
- Add the Eggs and Vanilla: Beat in the egg and vanilla extract until well combined.
- Incorporate Dry Ingredients: Gradually add the flour and ground nuts to the wet ingredients. Mix until just combined.
- Chill the Dough: Wrap the dough in plastic wrap and refrigerate for at least one hour.
- Roll and Cut: Preheat your oven to 350°F (175°C). Roll out the chilled dough to about 1/4-inch thick and cut out shapes.
- Bake: Place cookies on a parchment-lined baking sheet and bake for 10-12 minutes, or until edges are just starting to brown.
- Assemble: Once cooled, spread raspberry jam on the flat side of each bottom cookie and place the tops with cut-outs.
- Dust with Powdered Sugar: Dust the tops with powdered sugar before serving.
Notes
Chill the dough to keep cookies from spreading. Use parchment paper for easy baking.
