Instructions

  1. Prepare the Dough: In a large mixing bowl, cream together the softened unsalted butter and sugar until light and fluffy, about 3-4 minutes.
  2. Add the Eggs and Vanilla: Beat in the egg and vanilla extract until well combined.
  3. Incorporate Dry Ingredients: Gradually add the flour and ground nuts to the wet ingredients. Mix until just combined.
  4. Chill the Dough: Wrap the dough in plastic wrap and refrigerate for at least one hour.
  5. Roll and Cut: Preheat your oven to 350°F (175°C). Roll out the chilled dough to about 1/4-inch thick and cut out shapes.
  6. Bake: Place cookies on a parchment-lined baking sheet and bake for 10-12 minutes, or until edges are just starting to brown.
  7. Assemble: Once cooled, spread raspberry jam on the flat side of each bottom cookie and place the tops with cut-outs.
