Delightful Linzer cookies filled with tart raspberry jam and dusted with powdered sugar.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup almond flour
  • 1 cup unsalted butter, at room temperature
  • 1 cup powdered sugar
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1 cup raspberry jam

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the all-purpose flour and almond flour in a bowl.
  3. Cream the unsalted butter and powdered sugar together until light and fluffy.
  4. Incorporate the egg yolk and vanilla extract into the butter mixture.
  5. Combine the flour mix with the wet ingredients until just combined.
  6. Chill the dough in plastic wrap for at least an hour.
  7. Roll out the chilled dough to about 1/8-inch thickness and cut out shapes.
  8. Bake on a parchment-lined baking sheet for 10-12 minutes until edges are lightly golden.
  9. Cool completely and fill with raspberry jam, then top with another cookie.
  10. Dust with powdered sugar before serving.
