Delightful Linzer cookies filled with tart raspberry jam and dusted with powdered sugar.
Ingredients

- 2 cups all-purpose flour
- 1 cup almond flour
- 1 cup unsalted butter, at room temperature
- 1 cup powdered sugar
- 1 egg yolk
- 1 teaspoon vanilla extract
- 1 cup raspberry jam
Instructions
- Preheat your oven to 350°F (175°C).
- Mix the all-purpose flour and almond flour in a bowl.
- Cream the unsalted butter and powdered sugar together until light and fluffy.
- Incorporate the egg yolk and vanilla extract into the butter mixture.
- Combine the flour mix with the wet ingredients until just combined.
- Chill the dough in plastic wrap for at least an hour.
- Roll out the chilled dough to about 1/8-inch thickness and cut out shapes.
- Bake on a parchment-lined baking sheet for 10-12 minutes until edges are lightly golden.
- Cool completely and fill with raspberry jam, then top with another cookie.
- Dust with powdered sugar before serving.
Notes
Ensure to let cookies cool completely to prevent the jam from running.
