- 1 bell pepper, diced
- 2 cups fresh diced tomatoes (or 1 can crushed tomatoes)
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 pinch cayenne pepper (optional)
- Salt and pepper to taste
- 4 farm-fresh eggs
- 1/2 cup feta cheese, crumbled
- Fresh parsley or cilantro, chopped for garnish
Instructions
- Prep Your Ingredients: Dice your onion, garlic, and bell peppers.
- Sauté the Aromatics: Heat olive oil in a large skillet over medium heat. Add onion and sauté for 4-5 minutes until translucent. Stir in garlic and bell peppers, cooking for another 2-3 minutes.
- Add the Tomatoes and Spices: Pour in tomatoes, cumin, paprika, cayenne, salt, and pepper. Stir and let simmer for 10-15 minutes.
- Create Wells for the Eggs: Make small wells in the sauce and crack eggs into them. Sprinkle feta over the top.
- Cover and Cook: Reduce heat, cover, and allow the eggs to poach for 5-7 minutes until the whites are firm but yolks are runny.
- Garnish and Serve: Finish with a drizzle of olive oil, herbs, and extra feta. Serve warm with crusty bread.
