Ingredients

- 2 pounds steak (sirloin, chuck, or tri-tip)
- 1 cup beef or vegetable broth
- 1/4 cup soy sauce
- 4 cloves garlic, minced
- 1 large onion, diced
- 2 cups chopped vegetables (carrots, bell peppers, or mushrooms)
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- Salt and pepper to taste
- Olive oil for searing
Instructions
- Cut the steak into bite-sized pieces, about 1-inch cubes, and season with salt and pepper.
- Heat a skillet over medium-high heat, add olive oil, and sear the steak bites in batches until golden brown on all sides.
- In the same skillet, add more olive oil if needed and sauté the diced onions and minced garlic until soft and fragrant.
- In the slow cooker, combine the seared steak, sautéed onions and garlic, vegetables, soy sauce, and broth. Stir to mix and season with fresh herbs.
- Set the slow cooker on low for 6-8 hours or high for 3-4 hours.
- When the steak bites are tender, taste and adjust the seasoning, adding more soy sauce or herbs if desired.
- Serve hot with your favorite sides.
Notes
Don’t skip searing the steak for better flavor. Adjust cooking time to avoid overcooking.
