Ingredients

  • 2 pounds steak (sirloin, chuck, or tri-tip)
  • 1 cup beef or vegetable broth
  • 1/4 cup soy sauce
  • 4 cloves garlic, minced
  • 1 large onion, diced
  • 2 cups chopped vegetables (carrots, bell peppers, or mushrooms)
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • Salt and pepper to taste
  • Olive oil for searing

Instructions

  1. Cut the steak into bite-sized pieces, about 1-inch cubes, and season with salt and pepper.
  2. Heat a skillet over medium-high heat, add olive oil, and sear the steak bites in batches until golden brown on all sides.
  3. In the same skillet, add more olive oil if needed and sauté the diced onions and minced garlic until soft and fragrant.
  4. In the slow cooker, combine the seared steak, sautéed onions and garlic, vegetables, soy sauce, and broth. Stir to mix and season with fresh herbs.
  5. Set the slow cooker on low for 6-8 hours or high for 3-4 hours.
  6. When the steak bites are tender, taste and adjust the seasoning, adding more soy sauce or herbs if desired.
  7. Serve hot with your favorite sides.

Notes

Don’t skip searing the steak for better flavor. Adjust cooking time to avoid overcooking.
