Ingredients

  • 2 garlic cloves, minced
  • 1 bell pepper, chopped
  • 1 can fire-roasted diced tomatoes
  • 2 tbsp taco seasoning
  • 4 cups chicken or vegetable broth
  • 1 cup corn (fresh, frozen, or canned)
  • 1 can black beans, rinsed
  • Olive oil, for sautéing

Instructions

  1. Heat a drizzle of olive oil in a large pot over medium heat.
  2. Add the chopped onions and sauté until translucent and fragrant.
  3. Toss in the minced garlic and cook for another minute.
  4. Stir in the ground turkey and cook until browned, about 5-7 minutes.
  5. Add the chopped bell peppers and cook until they soften.
  6. Sprinkle in the taco seasoning, followed by the canned tomatoes, corn, and black beans. Stir to combine.
  7. Pour in the broth and bring to a gentle simmer. Let it bubble for about 20-30 minutes.
  8. Taste and adjust seasoning with salt, pepper, or lime juice before serving.
