- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, chopped
- 1 can fire-roasted diced tomatoes
- 2 tbsp taco seasoning
- 4 cups chicken or vegetable broth
- 1 cup corn (fresh, frozen, or canned)
- 1 can black beans, rinsed
- Olive oil, for sautéing
Instructions
- Heat a drizzle of olive oil in a large pot over medium heat.
- Add the chopped onions and sauté until translucent and fragrant.
- Toss in the minced garlic and cook for another minute.
- Stir in the ground turkey and cook until browned, about 5-7 minutes.
- Add the chopped bell peppers and cook until they soften.
- Sprinkle in the taco seasoning, followed by the canned tomatoes, corn, and black beans. Stir to combine.
- Pour in the broth and bring to a gentle simmer. Let it bubble for about 20-30 minutes.
- Taste and adjust seasoning with salt, pepper, or lime juice before serving.
Notes
Don’t rush the simmer; the longer it sits, the better the flavors meld. For added heat, consider diced jalapeños or hot sauce.
