Description

A heartwarming Easy Tuscan Soup packed with flavor from sautéed garlic, mushrooms, and fresh herbs. Perfect for chilly evenings.


Ingredients

  • 8 oz fresh baby bella or cremini mushrooms, sliced
  • 4 cloves fresh garlic, minced
  • 1 large sweet onion, diced
  • 4 cups vegetable or chicken broth
  • 1 tsp fresh thyme
  • 1/4 cup fresh parsley, chopped
  • 2 cups fresh spinach or kale
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onions and sauté until translucent, about 3-4 minutes.
  2. Add minced garlic and sauté for another minute until fragrant.
  3. Incorporate sliced mushrooms and cook until golden brown, about 5-7 minutes.
  4. Pour in the vegetable or chicken broth and bring to a low simmer.
  5. Season with thyme, parsley, salt and pepper, and let the flavors meld.
  6. Stir in spinach or kale and cook until wilted, about 3-4 minutes.
  7. Adjust seasoning if needed and serve hot with a drizzle of olive oil and fresh herbs on top.

Notes

For added flavor, consider a splash of balsamic vinegar or grated Parmesan cheese. This soup freezes well for up to three months.
