- 8 oz fresh baby bella or cremini mushrooms, sliced
- 4 cloves fresh garlic, minced
- 1 large sweet onion, diced
- 4 cups vegetable or chicken broth
- 1 tsp fresh thyme
- 1/4 cup fresh parsley, chopped
- 2 cups fresh spinach or kale
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onions and sauté until translucent, about 3-4 minutes.
- Add minced garlic and sauté for another minute until fragrant.
- Incorporate sliced mushrooms and cook until golden brown, about 5-7 minutes.
- Pour in the vegetable or chicken broth and bring to a low simmer.
- Season with thyme, parsley, salt and pepper, and let the flavors meld.
- Stir in spinach or kale and cook until wilted, about 3-4 minutes.
- Adjust seasoning if needed and serve hot with a drizzle of olive oil and fresh herbs on top.
Notes
For added flavor, consider a splash of balsamic vinegar or grated Parmesan cheese. This soup freezes well for up to three months.
