- 2 large Eggs
- 2 slices of Bread (brioche or sourdough)
- 1/4 cup Cheese (sharp cheddar or creamy havarti)
- 1/2 cup sliced Mushrooms (cremini or shiitake)
- Fresh Herbs (basil, chives, or parsley)
- 1 tablespoon Butter or Olive Oil
Instructions
- Heat butter or olive oil in a skillet over medium heat. Add sliced mushrooms and sauté until golden brown, about 5-7 minutes. Season with salt and pepper.
- In a mixing bowl, whisk eggs with a pinch of salt and pepper. Pour into a non-stick skillet and stir gently until soft curds form. Cook until just set, then remove from heat.
- Toast the bread until golden brown. On one slice, layer sautéed mushrooms, followed by scrambled eggs. Add cheese on top and fresh herbs before completing with the second slice of bread.
- Cut the sandwich in half and serve warm, optionally with a side of greens or salad.
Notes
For a twist, add avocado or hot sauce. Don’t rush the eggs for a fluffier texture.
