- 1 cup Dark Chocolate (70% cocoa)
- 1/2 cup Unsalted Butter
- 1 cup Granulated Sugar
- 1/2 cup Brown Sugar
- 1 cup All-Purpose Flour
- 1/2 cup Cocoa Powder
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
- 3 large Eggs
- 1 tsp Vanilla Extract
- 1 cup Espresso or Strong Coffee
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
- Melt the dark chocolate and unsalted butter together using a double boiler or microwave. Stir until smooth, then let cool slightly.
- Mix the dry ingredients in a separate bowl: cocoa powder, flour, sugars, baking powder, baking soda, and salt.
- Combine the wet ingredients by beating together the eggs, granulated sugar, brown sugar, vanilla extract, and brewed espresso until well mixed.
- Fold the chocolate and butter mixture into the wet ingredients, then gradually add the dry ingredients until just combined.
- Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
- Cool the cake in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Serve dusted with powdered sugar or with whipped cream or vanilla ice cream.
Notes
For a dairy-free version, substitute coconut oil for butter. For a gluten-free option, use almond or coconut flour. Use strong coffee if espresso is unavailable.
