Description

Ingredients

  • 1 cup Dark Chocolate (70% cocoa)
  • 1/2 cup Unsalted Butter
  • 1 cup Granulated Sugar
  • 1/2 cup Brown Sugar
  • 1 cup All-Purpose Flour
  • 1/2 cup Cocoa Powder
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 3 large Eggs
  • 1 tsp Vanilla Extract
  • 1 cup Espresso or Strong Coffee

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Melt the dark chocolate and unsalted butter together using a double boiler or microwave. Stir until smooth, then let cool slightly.
  3. Mix the dry ingredients in a separate bowl: cocoa powder, flour, sugars, baking powder, baking soda, and salt.
  4. Combine the wet ingredients by beating together the eggs, granulated sugar, brown sugar, vanilla extract, and brewed espresso until well mixed.
  5. Fold the chocolate and butter mixture into the wet ingredients, then gradually add the dry ingredients until just combined.
  6. Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
  7. Cool the cake in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  8. Serve dusted with powdered sugar or with whipped cream or vanilla ice cream.

Notes

For a dairy-free version, substitute coconut oil for butter. For a gluten-free option, use almond or coconut flour. Use strong coffee if espresso is unavailable.
