Ingredients

- 1 cup dark chocolate (70% cocoa or higher)
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 3 large eggs
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1 teaspoon baking powder
- 1/2 cup brewed espresso or strong coffee
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Prepare two 9-inch round cake pans by greasing them with butter and dusting with cocoa powder.
- Melt the dark chocolate and butter together in a double boiler until smooth. Set aside to cool slightly.
- Combine the flour, cocoa powder, and baking powder in a mixing bowl.
- Cream the sugar and eggs in another bowl until light and fluffy, about 3-4 minutes.
- Mix in the melted chocolate, followed by the espresso and vanilla.
- Fold the dry ingredients into the wet mixture until just combined; do not overmix.
- Bake in the preheated oven for 30-35 minutes. A toothpick should come out with a few moist crumbs.
- Cool cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely before frosting.
Notes
Enjoy plain or with a chocolate ganache frosting. Pair with whipped cream or ice cream.
