Ingredients

  • 1 cup dark chocolate (70% cocoa or higher)
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 cup brewed espresso or strong coffee
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare two 9-inch round cake pans by greasing them with butter and dusting with cocoa powder.
  2. Melt the dark chocolate and butter together in a double boiler until smooth. Set aside to cool slightly.
  3. Combine the flour, cocoa powder, and baking powder in a mixing bowl.
  4. Cream the sugar and eggs in another bowl until light and fluffy, about 3-4 minutes.
  5. Mix in the melted chocolate, followed by the espresso and vanilla.
  6. Fold the dry ingredients into the wet mixture until just combined; do not overmix.
  7. Bake in the preheated oven for 30-35 minutes. A toothpick should come out with a few moist crumbs.
  8. Cool cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely before frosting.

Notes
