- 1 Lemon, juiced
Instructions
- Marinate the chicken in a mixture of berbere spice, olive oil, salt, pepper, and lemon juice. Let it marinate for at least 30 minutes.
- Heat oil in a large skillet over medium heat. Add chopped onions and sauté until translucent.
- Stir in minced garlic and ginger, allowing their flavors to bloom.
- Add the marinated chicken to the skillet and sear on both sides until golden brown.
- Pour in tomatoes and broth, stirring to combine. Bring to a gentle simmer, then cover and cook for 25–30 minutes.
- Check for seasoning and adjust as needed before serving with injera or rice.
