Instructions
- Preheat your oven to 375°F (190°C).
- Grease or line a muffin tin with muffin liners.
- In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, cinnamon, and salt.
- In another bowl, whisk together the melted butter, eggs, milk, and vanilla extract until well combined.
- Gently fold the wet mixture into the dry ingredients, then add the chopped apples; avoid overmixing.
- Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Cool in the pan for a few minutes before transferring to a wire rack to cool completely.
