Instructions

  1. Hard-boil the eggs: Place in a pot, cover with cold water, bring to a boil. Cover, remove from heat, and let sit for 12–15 minutes. Transfer to an ice bath to cool.
  2. Prepare the filling: Peel and halve the eggs. Remove yolks and place in a bowl. Add mashed avocado, mustard, lemon juice, and Greek yogurt (or mayo).
  3. Mix well: Combine until creamy. Family members can help with mashing!
  4. Season: Add salt, black pepper, and fresh herbs to taste.
  5. Fill the eggs: Spoon or pipe the avocado mixture into egg whites. Garnish with smoked paprika.
