- 2 medium ripe avocados
- 1 tablespoon mustard (Dijon or yellow)
- 1 tablespoon freshly squeezed lemon juice
- 2 tablespoons Greek yogurt or mayonnaise
- Salt and black pepper to taste
- Fresh herbs (diced chives or dill)
- Smoked paprika for garnish
Instructions
- Hard-boil the eggs: Place in a pot, cover with cold water, bring to a boil. Cover, remove from heat, and let sit for 12–15 minutes. Transfer to an ice bath to cool.
- Prepare the filling: Peel and halve the eggs. Remove yolks and place in a bowl. Add mashed avocado, mustard, lemon juice, and Greek yogurt (or mayo).
- Mix well: Combine until creamy. Family members can help with mashing!
- Season: Add salt, black pepper, and fresh herbs to taste.
- Fill the eggs: Spoon or pipe the avocado mixture into egg whites. Garnish with smoked paprika.
- Chill and serve: Refrigerate for 30 minutes before serving.
