- 2 large eggs

Instructions
- Preheat your oven to 350°F (175°C).
- Mix the flour, cocoa powder, baking soda, ground ginger, and salt in a bowl.
- Cream the butter with brown and white sugar until light.
- Add the eggs one at a time and mix in fresh ginger.
- Combine the dry ingredients with the wet mixture until dough forms.
- Scoop dough onto a baking sheet, leaving space between each cookie.
- Bake for 10-12 minutes until edges are set.
- Cool on a wire rack before enjoying.
