Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
- Add the eggnog and vanilla extract, mixing until well combined.
- Whisk together the flour, baking powder, baking soda, and spices in a separate bowl.
- Mix the dry ingredients into the wet ingredients until just combined.
- Combine granulated sugar and cinnamon in a small bowl for the coating.
- Form dough balls and roll them in the spiced sugar mixture before placing on the baking sheet.
- Bake for 10-12 minutes until golden around the edges but soft in the center.
- Cool on the baking sheet for a few minutes before transferring them to a rack to cool completely.
