Instructions
- Preheat your oven to 350°F (175°C).
- Mix the dry ingredients: In a bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and ginger.
- Cream the butter and sugars: In a large bowl, beat butter, granulated sugar, and brown sugar until creamy.
- Add the egg and vanilla: Mix in the egg and vanilla extract.
- Combine the dry mixture into the wet ingredients until just blended.
- Shape the cookies: Scoop tablespoon-sized amounts of dough, roll into balls, and place on a baking sheet lined with parchment paper.
- Bake: Bake for 10-12 minutes until edges are golden and the center remains soft.
- Cool the cookies completely before frosting.
- Frost: Beat together softened butter and powdered sugar, adding milk to adjust consistency.
- Decorate as desired with sprinkles or chocolate drizzle.
Notes
For a vegan version, substitute butter with coconut oil or vegan butter, and granulated sugar with maple syrup. Store in an airtight container for up to a week.
