- 1 medium crisp apple (such as Fuji or Honeycrisp)
- 1/2 cup feta or goat cheese (optional)
- Zest and juice of 1 orange
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C). Spread the pecans onto a baking sheet and toast for 8-10 minutes, or until fragrant.
- Rinse and dry the mixed greens, tearing larger leaves into bite-sized pieces.
- Wash and chop the apple into cubes, leaving the skin on for added texture.
- Whisk together olive oil, balsamic vinegar, honey, salt, and pepper in a small bowl.
- Combine the greens, apple chunks, cranberries, and cooled pecans in a large bowl. Drizzle with the dressing and toss gently.
- Serve immediately, garnished with cheese and orange zest if desired.
