- 2 cups fresh or dried figs, chopped
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 3 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/2 cup milk
Instructions
- Preheat the Oven: Set your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or two 8-inch round cake pans.
- Prepare the Figs: If using fresh figs, wash them well and chop. If dried, soak in warm water for 10 minutes and chop.
- Mix the Dry Ingredients: In a bowl, whisk together flour, baking powder, baking soda, and spices. Set aside.
- Cream the Butter and Sugar: In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Add Eggs and Vanilla: Beat in the eggs one at a time, incorporating each fully before adding the next. Mix in the vanilla extract.
- Combine: Gradually add dry ingredients to the wet mixture, alternating with milk until just combined. Gently fold in chopped figs.
- Bake: Pour batter into the prepared pan(s) and smooth the top. Bake for 30-40 minutes, or until a toothpick inserted comes out clean.
- Cool: Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Frosting: Decorate with whipped cream or caramel sauce as desired.
Notes
For a dairy-free version, substitute butter with coconut oil. Adjust sugar based on fig sweetness.
