- 2 Filet Mignon steaks
- 1 cup cremini or shiitake mushrooms, sliced
- 1 cup heavy cream
- 2 cloves garlic, minced
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1/4 cup white wine
- Fresh thyme and parsley, to taste
- Salt and pepper, to taste
Instructions
- Bring the filet mignon to room temperature for about 30 minutes before cooking.
- Season both sides with salt and freshly cracked pepper.
- Heat equal parts butter and olive oil in a large skillet over medium-high heat.
- Sear the filet for about 4-5 minutes on each side for medium-rare.
- Transfer the steak to a plate and cover loosely with foil to rest.
- Add more butter to the skillet and sauté the mushrooms until golden brown, about 5-7 minutes.
- Add minced garlic and cook until fragrant, then deglaze with white wine.
- Let the wine simmer for a minute, then stir in the heavy cream.
- Reduce the heat, add herbs, and allow the sauce to thicken for about 5 minutes.
- Slice the filet mignon and drizzle the creamy sauce over the top before serving.
Notes
For a lighter version, substitute half of the cream with chicken stock. Don’t rush the cooking process for the best results.
