Ingredients

  • 2 (6-ounce) filet mignon steaks
  • 2 tablespoons unsalted butter, softened
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper to taste

Instructions

  1. Let the filet mignon come to room temperature for about 30 minutes before cooking.
  2. Pat the meat dry with paper towels and season generously with salt and black pepper on both sides.
  3. Mix the softened unsalted butter with minced garlic and fresh herbs in a small bowl and set aside.
  4. Heat a skillet over medium-high heat and add olive oil. Once shimmering, add the filet mignon.
  5. Sear for about 3-4 minutes on each side without moving it too much.
  6. In the last minute of cooking, add a pat of garlic herb butter on top of each filet and let it melt.
  7. After cooking, let the filet mignon rest for about five minutes on a cutting board.
  8. Slice against the grain before serving.

Notes

Testing doneness with a meat thermometer is recommended. Aim for 130°F for medium-rare. Letting the meat rest is crucial for juiciness.
