- 2 (6-ounce) filet mignon steaks
- 2 tablespoons unsalted butter, softened
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon olive oil
- Salt and freshly ground black pepper to taste
Instructions
- Let the filet mignon come to room temperature for about 30 minutes before cooking.
- Pat the meat dry with paper towels and season generously with salt and black pepper on both sides.
- Mix the softened unsalted butter with minced garlic and fresh herbs in a small bowl and set aside.
- Heat a skillet over medium-high heat and add olive oil. Once shimmering, add the filet mignon.
- Sear for about 3-4 minutes on each side without moving it too much.
- In the last minute of cooking, add a pat of garlic herb butter on top of each filet and let it melt.
- After cooking, let the filet mignon rest for about five minutes on a cutting board.
- Slice against the grain before serving.
Notes
Testing doneness with a meat thermometer is recommended. Aim for 130°F for medium-rare. Letting the meat rest is crucial for juiciness.
