Description

Ingredients

  • 500g salmon fillets, skinless
  • 400g Yukon Gold potatoes, cubed
  • 1 medium yellow onion, diced
  • 2 medium carrots, sliced
  • 2 tablespoons fresh dill, chopped
  • 200ml heavy cream
  • 1 liter fish stock
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 splash of lemon juice

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onions and sliced carrots, cooking until the onions become translucent.
  2. Stir in cubed potatoes and cook for a few minutes.
  3. Pour in fish stock and bring to a gentle simmer; cook for about 10-15 minutes until the potatoes are tender.
  4. Gently place the salmon fillets into the pot and poach in the simmering broth for 5-7 minutes, until cooked through.
  5. Stir in the cream and fresh dill, letting the flavors meld for a couple of minutes.
  6. Season with salt, pepper, and a splash of lemon juice.
  7. Ladle the soup into bowls and serve warm, garnishing with fresh dill.
