- 500g salmon fillets, skinless
- 400g Yukon Gold potatoes, cubed
- 1 medium yellow onion, diced
- 2 medium carrots, sliced
- 2 tablespoons fresh dill, chopped
- 200ml heavy cream
- 1 liter fish stock
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 splash of lemon juice
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onions and sliced carrots, cooking until the onions become translucent.
- Stir in cubed potatoes and cook for a few minutes.
- Pour in fish stock and bring to a gentle simmer; cook for about 10-15 minutes until the potatoes are tender.
- Gently place the salmon fillets into the pot and poach in the simmering broth for 5-7 minutes, until cooked through.
- Stir in the cream and fresh dill, letting the flavors meld for a couple of minutes.
- Season with salt, pepper, and a splash of lemon juice.
- Ladle the soup into bowls and serve warm, garnishing with fresh dill.
