Ingredients

  • Bone-in, skin-on chicken pieces
  • Your favorite barbecue sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 tablespoon brown sugar
  • 2 tablespoons apple cider vinegar
  • Optional: Fresh herbs (thyme or rosemary), cayenne pepper

Instructions

  1. Rinse the chicken pieces under cold water and pat dry with paper towels.
  2. In a small bowl, combine garlic powder, smoked paprika, cumin, and brown sugar. Add apple cider vinegar to create a paste.
  3. Rub the mixture all over the chicken, ensuring all pieces are coated. Let marinate for at least 30 minutes, preferably longer.
  4. Preheat the grill to medium-high heat.
  5. Place the chicken skin-side down on the grill, cooking for about 6-8 minutes until charred. Flip, baste with barbecue sauce, and grill for another 6-8 minutes until cooked through (internal temperature of 165°F).
  6. Remove from grill and let rest for 5 minutes before serving.

Notes

For best results, marinading overnight will enhance the flavor. Can also be cooked in the oven if grilling conditions are not optimal.
