- 1 packet active dry yeast
- 3/4 cup warm water
- 1/4 cup baking soda
- 1 cup shredded cheddar cheese
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon paprika
- Coarse sea salt, to taste
Instructions
- Activate the yeast: In a small bowl, combine warm water and active dry yeast. Let it sit for about 5–10 minutes until frothy.
- Make the dough: In a large bowl, combine flour and salt. Once the yeast is ready, mix it into the flour, and knead until the dough is smooth and elastic—this usually takes about 5 minutes.
- Let it rise: Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm area until doubled in size, typically around 1 hour.
- Shape the sticks: Once the dough has risen, punch it down and divide it into pieces. Roll each piece into a long rope, then cut to your desired pretzel stick size.
- Prepare the baking soda bath: In a large pot, boil water and stir in baking soda. Drop each pretzel stick into the boiling water for about 30 seconds.
- Make the cheddar cheese mix: While the pretzel sticks cool slightly, combine shredded cheddar cheese and spices in a mixing bowl.
- Assemble: Place the sticks onto a parchment-lined baking sheet, sprinkle with the cheese mixture, and finish with a dash of coarse sea salt.
- Bake to perfection: Preheat your oven to 425°F (218°C) and bake for 12–15 minutes until golden brown.
