Ingredients

  • 200g Dark Chocolate (high-quality)
  • 2 tablespoons Coconut Oil
  • 3 Eggs
  • 1/2 cup Coconut Flour (or almond flour)
  • 1/2 cup Pistachios (finely chopped, plus extra for garnish)
  • 1/3 cup Maple Syrup or Honey
  • 1 teaspoon Vanilla Extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a heatproof bowl, melt the dark chocolate and coconut oil over simmering water, stirring until smooth. Let cool slightly.
  3. In another bowl, combine coconut flour and chopped pistachios.
  4. Whisk the eggs and maple syrup in a large bowl until pale and frothy.
  5. Fold in the melted chocolate mixture until well combined.
  6. Add the coconut flour and pistachio mixture along with vanilla extract, combining until smooth.
  7. Line an 8×8 inch baking pan with parchment paper and pour the batter in, smoothing the top.
  8. Bake for 20-25 minutes until the edges are firm and the center is slightly soft.
  9. Let cool completely in the pan before cutting into squares.
