- 200g Dark Chocolate (high-quality)
- 2 tablespoons Coconut Oil
- 3 Eggs
- 1/2 cup Coconut Flour (or almond flour)
- 1/2 cup Pistachios (finely chopped, plus extra for garnish)
- 1/3 cup Maple Syrup or Honey
- 1 teaspoon Vanilla Extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a heatproof bowl, melt the dark chocolate and coconut oil over simmering water, stirring until smooth. Let cool slightly.
- In another bowl, combine coconut flour and chopped pistachios.
- Whisk the eggs and maple syrup in a large bowl until pale and frothy.
- Fold in the melted chocolate mixture until well combined.
- Add the coconut flour and pistachio mixture along with vanilla extract, combining until smooth.
- Line an 8×8 inch baking pan with parchment paper and pour the batter in, smoothing the top.
- Bake for 20-25 minutes until the edges are firm and the center is slightly soft.
- Let cool completely in the pan before cutting into squares.
Notes
For an indulgent touch, serve with a drizzle of melted dark chocolate or a dollop of whipped cream.
