Description

Delicious and fluffy blueberry pancakes that are perfect for family gatherings or a cozy brunch.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1 pinch salt
  • 1 cup milk (whole or buttermilk)
  • 1 egg
  • 2 tablespoons melted butter
  • 1 cup fresh blueberries

Instructions

  1. In a mixing bowl, combine the flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together the milk, egg, and melted butter.
  3. Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Fold in the fresh blueberries.
  4. Preheat a non-stick skillet over medium heat.
  5. Lightly brush the skillet with melted butter or oil. Pour about 1/4 cup of batter onto the skillet for each pancake.
  6. Cook until the edges look set and bubbles form on the surface, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown.
  7. Serve stacked with maple syrup and extra blueberries on top.

Notes

For an extra flavor boost, add a pinch of cinnamon or a splash of vanilla extract to the batter.
