Ingredients

- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1 pinch salt
- 1 cup milk (whole or buttermilk)
- 1 egg
- 2 tablespoons melted butter
- 1 cup fresh blueberries
Instructions
- In a mixing bowl, combine the flour, sugar, baking powder, and salt.
- In another bowl, whisk together the milk, egg, and melted butter.
- Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Fold in the fresh blueberries.
- Preheat a non-stick skillet over medium heat.
- Lightly brush the skillet with melted butter or oil. Pour about 1/4 cup of batter onto the skillet for each pancake.
- Cook until the edges look set and bubbles form on the surface, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown.
- Serve stacked with maple syrup and extra blueberries on top.
Notes
For an extra flavor boost, add a pinch of cinnamon or a splash of vanilla extract to the batter.
