Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper cupcake liners.
  2. Mix dry ingredients: whisk together flour, baking powder, and salt in a medium bowl.
  3. Cream softened butter and sugar in a large mixing bowl until light and fluffy.
  4. Incorporate eggs one at a time, mixing well after each. Then add orange zest, juice, and vanilla.
  5. Combine mixtures by gradually adding dry ingredients, mixing until just combined.
  6. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  7. Cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For a dairy-free version, use coconut oil instead of butter. You can also use natural sweeteners for lower sugar content.
