- 1/2 cup unsalted butter, softened
- 3 large eggs
- 1/2 cup fresh orange juice
- 2 tbsp orange zest
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper cupcake liners.
- Mix dry ingredients: whisk together flour, baking powder, and salt in a medium bowl.
- Cream softened butter and sugar in a large mixing bowl until light and fluffy.
- Incorporate eggs one at a time, mixing well after each. Then add orange zest, juice, and vanilla.
- Combine mixtures by gradually adding dry ingredients, mixing until just combined.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
- Frost with your favorite frosting after they have cooled.
Notes
For a dairy-free version, use coconut oil instead of butter. You can also use natural sweeteners for lower sugar content.
