- 4 Eggs (separated)
- 1 cup All-purpose flour (or gluten-free alternative)
- 1 tablespoon Baking powder
- 1 cup Milk (whole, almond, or oat milk)
- 2 tablespoons Sugar
- 1 teaspoon Vanilla extract
- Butter (or coconut oil for greasing)
Instructions
- Separate the eggs, making sure no yolk gets in the whites.
- Whisk egg yolks with milk, sugar, and vanilla until smooth. Fold in flour and baking powder until just combined.
- Whip the egg whites until stiff peaks form.
- Fold the whipped egg whites into the yolk mixture gently.
- Heat your skillet over medium-low heat and grease it lightly.
- Spoon about one-third of a cup of batter into the pan and cover it to trap steam.
- Cook for about 4-5 minutes until set, then flip and cook for another 3-4 minutes.
- Serve immediately with syrup, fresh fruit, or powdered sugar.
Notes
For a personal twist, add blueberries or chocolate chips to the batter. Avoid overmixing to keep the pancakes fluffy.
