Ingredients

  • 4 Eggs (separated)
  • 1 cup All-purpose flour (or gluten-free alternative)
  • 1 tablespoon Baking powder
  • 1 cup Milk (whole, almond, or oat milk)
  • 2 tablespoons Sugar
  • 1 teaspoon Vanilla extract
  • Butter (or coconut oil for greasing)

Instructions

  1. Separate the eggs, making sure no yolk gets in the whites.
  2. Whisk egg yolks with milk, sugar, and vanilla until smooth. Fold in flour and baking powder until just combined.
  3. Whip the egg whites until stiff peaks form.
  4. Fold the whipped egg whites into the yolk mixture gently.
  5. Heat your skillet over medium-low heat and grease it lightly.
  6. Spoon about one-third of a cup of batter into the pan and cover it to trap steam.
  7. Cook for about 4-5 minutes until set, then flip and cook for another 3-4 minutes.
  8. Serve immediately with syrup, fresh fruit, or powdered sugar.

Notes

For a personal twist, add blueberries or chocolate chips to the batter. Avoid overmixing to keep the pancakes fluffy.
