French Apple Cider Chicken

A comforting dish combining tender chicken with the sweet warmth of apple cider and fragrant herbs.


Ingredients

  • 4 skin-on, bone-in chicken thighs
  • 1 cup apple cider
  • 2 tablespoons butter
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • Fresh thyme or rosemary, to taste
  • Salt and pepper, to taste

Instructions

  1. Season the chicken thighs generously with salt and pepper. Heat a tablespoon of butter in a large skillet over medium-high heat, and add the chicken skin-side down. Cook for about 6-7 minutes until golden brown. Flip and cook for an additional 5 minutes. Remove the chicken and set it aside.
  2. Add another tablespoon of butter to the same skillet, and sauté chopped onions and minced garlic until softened, about 2-3 minutes.
  3. Pour in the apple cider, scraping up any brown bits from the bottom of the pan. Stir in a cup of chicken broth and the herbs of your choice.
  4. Return the chicken to the skillet, skin side up. Lower the heat, cover the skillet, and let it simmer gently for about 25 minutes or until the chicken is cooked through.
  5. Mix in a pat of butter for added richness before serving.

Notes

Serve with buttery mashed potatoes or roasted vegetables for a complete meal.
