A comforting blend of sautéed chicken with apple cider, shallots, and thyme, making it a perfect family favorite for gatherings.

- 4 Chicken thighs or breasts
- 1 cup Apple cider
- 2 tablespoons Butter
- 2 Shallots, sliced
- 2 cloves Garlic, minced
- 1 cup Mushrooms, chopped (cremini or button)
- 1 cup Chicken broth
- 2 teaspoons Fresh thyme leaves
- Salt and pepper to taste
Instructions
- Prep the chicken: Season the chicken pieces generously with salt and pepper.
- Sear the chicken: In a heavy skillet, melt a tablespoon of butter over medium-high heat. When sizzling, add the chicken and sear until golden brown, about 6-7 minutes. Flip and cook for another few minutes. Remove and set aside.
- Sauté shallots and garlic: In the same skillet, add another tablespoon of butter, then toss in the sliced shallots and minced garlic. Sauté until fragrant, about 2-3 minutes.
- Add the mushrooms: Next, add in the chopped mushrooms and sauté until softened, around 5 minutes.
- Pour in the cider and chicken broth: Use a wooden spoon to scrape the bottom of the pan.
- Return chicken to skillet: Nest the chicken back in, pouring any juices over it. Reduce heat to low, cover, and simmer for 20-25 minutes until cooked through.
- Finish with fresh thyme: Stir in the thyme leaves in the last few minutes.
- Serve: Garnish with extra thyme leaves if desired and enjoy.
Notes
Feel free to use bone-in chicken or substitute apple cider with pear cider for a twist.
