A heartwarming French onion beef stew topped with crispy, cheesy bread that brings loved ones together.

- 2 lbs beef chuck, cubed
- 3 large sweet onions, sliced
- 8 oz button mushrooms, sliced
- 3 cloves garlic, minced
- 4 cups low-sodium beef broth
- 2 sprigs fresh thyme
- 2 bay leaves
- 2 large carrots, sliced
- 1 French baguette, sliced
- 2 cups Gruyère cheese, grated
- Olive oil for sautéing
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat and sauté the sliced onions for about 15 to 20 minutes until golden brown.
- Add sliced mushrooms and minced garlic; cook for an additional 5-7 minutes.
- Push the onions and mushrooms to the side, add cubed beef chuck, and sear on all sides for 4-5 minutes. Season with salt and pepper.
- Pour in beef broth and add thyme and bay leaves. Scrape the bottom of the pot to release fond.
- Cover and simmer on low for 1.5 to 2 hours until beef is tender.
- About 10 minutes before serving, preheat the oven to 400°F (200°C).
- Once beef is tender, add sliced carrots and simmer uncovered for an additional 15-20 minutes.
- Prepare cheesy topping by placing sliced baguette in a baking dish and topping with grated cheese.
- Toast in the preheated oven for about 10 minutes until golden brown and bubbly.
- Serve the stew in bowls topped with cheesy bread.
Notes
Feel free to substitute ingredients based on availability, such as using beef brisket for a different texture or mixing different types of cheese for the topping.
