- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- Fillings: fruit preserves, chocolate chips, or nuts
Instructions
- Cream the unsalted butter and granulated sugar together in a large mixing bowl until creamy and pale.
- Add in the egg and vanilla extract, mixing well to combine.
- Gradually add the all-purpose flour, baking powder, and salt to the bowl, mixing until just combined.
- Wrap the dough in plastic wrap and chill in the refrigerator for about 30 minutes.
- Roll the chilled dough between two pieces of parchment paper into a rectangle about 1/4 inch thick.
- Spread an even layer of your chosen filling over the rolled dough.
- Tightly roll the dough into a cylinder using the parchment paper to help.
- Wrap the rolled dough in plastic wrap and chill again for another 30 minutes.
- Preheat the oven to 350°F (175°C) and slice the rolled dough into 1/4-inch rounds.
- Place on a lined baking sheet and bake for 8-10 minutes or until edges are lightly golden.
- Allow to cool on a wire rack.
Notes
For a gluten-free version, substitute all-purpose flour with gluten-free flour. For dairy-free, use coconut oil or vegan butter.
