Description

Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Fillings: fruit preserves, chocolate chips, or nuts

Instructions

  1. Cream the unsalted butter and granulated sugar together in a large mixing bowl until creamy and pale.
  2. Add in the egg and vanilla extract, mixing well to combine.
  3. Gradually add the all-purpose flour, baking powder, and salt to the bowl, mixing until just combined.
  4. Wrap the dough in plastic wrap and chill in the refrigerator for about 30 minutes.
  5. Roll the chilled dough between two pieces of parchment paper into a rectangle about 1/4 inch thick.
  6. Spread an even layer of your chosen filling over the rolled dough.
  7. Tightly roll the dough into a cylinder using the parchment paper to help.
  8. Wrap the rolled dough in plastic wrap and chill again for another 30 minutes.
  9. Preheat the oven to 350°F (175°C) and slice the rolled dough into 1/4-inch rounds.
  10. Place on a lined baking sheet and bake for 8-10 minutes or until edges are lightly golden.
  11. Allow to cool on a wire rack.

Notes

For a gluten-free version, substitute all-purpose flour with gluten-free flour. For dairy-free, use coconut oil or vegan butter.
