Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Grease your muffin tin or line it with paper liners.
  3. In one bowl, whisk together dry ingredients: cornmeal, flour, baking powder, baking soda, sugar, and salt.
  4. In another bowl, blend the wet ingredients: melted butter, milk, eggs, and vanilla extract.
  5. Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined.
  6. Fold in the sprinkles.
  7. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  8. Bake for 15-18 minutes or until a toothpick comes out clean.
  9. Allow the muffins to cool slightly before transferring to a wire rack.
