- 1 cup all-purpose flour
- 1 tablespoon baking powder

- 1/2 cup granulated sugar
- 2 large eggs
- 1 cup milk or buttermilk
- 1/2 cup melted butter (or coconut oil for dairy-free)
- 1/2 cup rainbow sprinkles
Instructions
- Preheat your oven to 400°F (200°C).
- Grease your muffin tin or line it with paper liners.
- In one bowl, whisk together dry ingredients: cornmeal, flour, baking powder, baking soda, sugar, and salt.
- In another bowl, blend the wet ingredients: melted butter, milk, eggs, and vanilla extract.
- Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined.
- Fold in the sprinkles.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 15-18 minutes or until a toothpick comes out clean.
- Allow the muffins to cool slightly before transferring to a wire rack.
