Instructions
- Preheat your oven to 400°F (200°C).
- Prepare a muffin tin by greasing it lightly or lining it with paper liners.
- In a large mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt until combined.
- In another bowl, mix together the milk, melted butter, and eggs.
- Gently pour the wet ingredients into the dry ingredients, mixing until just combined.
- Fold in the sprinkles gently.
- Divide the batter evenly among the muffin cups, filling them about two-thirds full.
- Bake for 15-20 minutes or until the tops are golden brown and a toothpick inserted comes out clean.
- Let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Notes
For a lighter version, consider using whole wheat flour or reducing the sugar. Store in an airtight container for up to three days or freeze for up to three months.
