Description

A comforting and flavorful dish featuring roasted chicken infused with garlic and fresh herbs, served with sweet caramelized carrots.


Ingredients

  • 4 boneless chicken breasts or thighs
  • 6 cloves fresh garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 4 large carrots, sliced
  • 2 tablespoons extra virgin olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the chicken: Rinse and pat dry the chicken, then place it in a large baking dish.
  3. Season with garlic and herbs: Mix the fresh garlic with chopped herbs, salt, and pepper. Rub this mixture generously all over the chicken.
  4. Chop your carrots: Slice the fresh carrots into even pieces, toss them in olive oil, and season lightly with salt and pepper.
  5. Arrange the ingredients: Scatter the seasoned carrots around the chicken in the baking dish.
  6. Roast it all together: Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C) and the carrots are tender.
  7. Let it rest: Allow the dish to rest for a few minutes before serving.
  8. Optional: Switch on the broiler for a crispy finish in the last couple of minutes.

Notes

Allow chicken and carrots ample space in the baking dish for best roasting results. Leftovers can be stored in an airtight container for up to 3 days.
