Ingredients

  • 1 lb large raw shrimp, peeled and deveined
  • 4 cloves fresh garlic, minced
  • 1/4 cup unsalted butter, melted
  • 2 tbsp olive oil
  • 1/2 cup freshly grated Parmesan cheese
  • Fresh parsley or Italian seasoning, to taste
  • 1 tbsp lemon juice
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. If using frozen shrimp, thaw thoroughly and pat dry with a paper towel.
  3. In a medium bowl, combine melted butter, minced garlic, olive oil, salt, and pepper.
  4. Add the shrimp and toss to coat evenly.
  5. Sprinkle grated Parmesan over the shrimp and toss again.
  6. Transfer the shrimp to a baking sheet lined with parchment paper in a single layer.
  7. Roast for 8-10 minutes until pink and opaque.
  8. Finish with lemon juice and sprinkle with fresh herbs. Serve hot!

For a dairy-free version, omit Parmesan or use a dairy-free alternative. Ensure shrimp are not overcrowded on the baking sheet for even cooking.
