Instructions

  1. Prep Your Ingredients: Clean and slice all your vegetables uniformly.
  2. Heat Your Skillet: Warm a large skillet over medium heat and add olive oil. Once hot, sauté the chopped garlic until fragrant, about 30 seconds.
  3. Add Onions: Toss in the onions and cook until they start to soften and become translucent.
  4. Layer in Peppers, Mushrooms, and Zucchini: Add the bell peppers and mushrooms, then after a few minutes, add the zucchini. Stir frequently.
  5. Season: Sprinkle with salt and pepper, and cook until veggies are tender but vibrant for about 8–10 minutes.
  6. Finish with Fresh Herbs: Off the heat, fold in fresh herbs and adjust seasoning as needed.
