Ingredients
- Fresh garlic
- Bell peppers (red, yellow, or green)
- Zucchini
- Mushrooms (cremini or button)
- Onion (sweet yellow or red)
- Olive oil (extra virgin)
- Fresh herbs (basil or parsley)
- Salt
- Pepper
Instructions
- Prep Your Ingredients: Clean and slice all your vegetables uniformly.
- Heat Your Skillet: Warm a large skillet over medium heat and add olive oil. Once hot, sauté the chopped garlic until fragrant, about 30 seconds.
- Add Onions: Toss in the onions and cook until they start to soften and become translucent.
- Layer in Peppers, Mushrooms, and Zucchini: Add the bell peppers and mushrooms, then after a few minutes, add the zucchini. Stir frequently.
- Season: Sprinkle with salt and pepper, and cook until veggies are tender but vibrant for about 8–10 minutes.
- Finish with Fresh Herbs: Off the heat, fold in fresh herbs and adjust seasoning as needed.
- Serve and Enjoy: Enjoy on its own or with grilled chicken or fish.
Notes
