- 4 eggs
- 1 cup granulated sugar
- 1 cup brown sugar
- 1 cup sweetened shredded coconut
- 1 cup pecans (whole or chopped)
- 1/2 cup unsalted butter
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). If using a store-bought crust, follow package instructions. For homemade, roll it out and fit it into a pie plate, then blind-bake until golden.
- In a saucepan, melt chocolate and butter over low heat, stirring until smooth. Allow to cool slightly.
- In a mixing bowl, whisk eggs, granulated sugar, brown sugar, and vanilla extract until well combined. Add the melted chocolate mixture and stir until fully incorporated.
- Gently fold in shredded coconut and pecans until evenly distributed.
- Pour the filling into the prepared crust and smooth the top with a spatula. Bake for 30-35 minutes or until the filling is set but still slightly jiggly in the center.
- Let the pie cool completely before slicing to ensure clean cuts and enhanced flavor.
- Serve warm or chilled, with whipped cream if desired.
Notes
For gluten-free, use a gluten-free pie crust. Substitute pecans with walnuts or omit coconut if preferred.
