  • 3 large eggs
  • 1/2 cup molasses
  • 1 cup cream cheese
  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 15×10-inch jelly roll pan with parchment paper.
  2. Whisk together flour, ginger, cinnamon, nutmeg, cocoa powder, and salt in a bowl.
  3. Cream the butter and brown sugar until light and fluffy.
  4. Add the eggs one at a time, incorporating each fully before the next.
  5. Mix in molasses until harmoniously combined.
  6. Fold in the dry ingredients until no streaks remain.
  7. Spread evenly in the prepared pan and bake for 15-20 minutes.
  8. Prepare a clean kitchen towel dusted with powdered sugar; invert the cake onto the towel and roll up with the towel inside.
  9. Let it cool completely.
  10. Blend cream cheese and powdered sugar until smooth for the frosting.
  11. Unroll the cooled cake, spread frosting, then roll back up without the towel.
  12. Frost the outside and dust with powdered sugar before serving.

Notes

Feel free to substitute brown sugar with white sugar or molasses with maple syrup. Adding spices can personalize the flavor.
