Instructions
- Preheat the oven to 350°F (175°C) and prepare a loaf pan with non-stick spray or parchment paper.
- Mix the dry ingredients: whisk together the flour, baking soda, baking powder, ground ginger, cinnamon, cloves, and salt. Set aside.
- Cream the cream cheese and sugar until smooth. Add the eggs one at a time, fully incorporating each before the next.
- Combine the mixtures by gradually adding the dry ingredients until just combined, then fold in the molasses and grated ginger.
- Create the swirl by pouring half the batter into the loaf pan, dolloping cream cheese over, and adding the remaining batter before swirling with a knife.
- Bake for 55-65 minutes or until a toothpick inserted in the center comes out clean, covering with foil if browning too quickly.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
