Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a loaf pan with non-stick spray or parchment paper.
  2. Mix the dry ingredients: whisk together the flour, baking soda, baking powder, ground ginger, cinnamon, cloves, and salt. Set aside.
  3. Cream the cream cheese and sugar until smooth. Add the eggs one at a time, fully incorporating each before the next.
  4. Combine the mixtures by gradually adding the dry ingredients until just combined, then fold in the molasses and grated ginger.
  5. Create the swirl by pouring half the batter into the loaf pan, dolloping cream cheese over, and adding the remaining batter before swirling with a knife.
  6. Bake for 55-65 minutes or until a toothpick inserted in the center comes out clean, covering with foil if browning too quickly.
  7. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
