Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Mix the dry ingredients: In a bowl, whisk together the flour, baking soda, baking powder, ginger, cinnamon, nutmeg, and salt.
- Cream the butter and sugar: Beat the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Combine the dry mixture with the butter mixture, alternating with molasses; mix until just combined.
- Prepare the cream cheese swirl by beating the cream cheese, sugar, and vanilla until smooth.
- Layer the batter: Pour half of the loaf batter into the pan, followed by half of the cream cheese mixture. Use a knife to create swirls, then repeat with remaining batter and cream cheese.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Cool in the pan for about 10-15 minutes, then transfer to a wire rack to cool completely.
Notes
If the loaf browns too much, cover with aluminum foil halfway through baking.
