Instructions

  1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. Mix the dry ingredients: In a large bowl, whisk together your almond flour, baking powder, and salt.
  3. Combine the wet ingredients: In a separate bowl, mix your melted butter or coconut oil with the egg, honey (or sweetener), and vanilla extract.
  4. Pour the wet mixture into the dry ingredients, stirring gently until just combined.
  5. Transfer the dough to a lightly floured surface and knead it gently just a couple of times.
  6. Pat it into a circle about an inch thick.
  7. Cut the dough into scone shapes; wedges like a pizza work well.
  8. Brush the tops with more melted butter and sprinkle with flaky sea salt if desired.
  9. Bake for approximately 15–20 minutes or until golden brown.
  10. Cool on a wire rack for a few minutes before serving.
