- 1/4 cup butter or coconut oil, melted
- 1 large egg
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- Optional: blueberries, chocolate chips, or dried fruit
Instructions
- Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
- Mix the dry ingredients: In a large bowl, whisk together your almond flour, baking powder, and salt.
- Combine the wet ingredients: In a separate bowl, mix your melted butter or coconut oil with the egg, honey (or sweetener), and vanilla extract.
- Pour the wet mixture into the dry ingredients, stirring gently until just combined.
- Transfer the dough to a lightly floured surface and knead it gently just a couple of times.
- Pat it into a circle about an inch thick.
- Cut the dough into scone shapes; wedges like a pizza work well.
- Brush the tops with more melted butter and sprinkle with flaky sea salt if desired.
- Bake for approximately 15–20 minutes or until golden brown.
- Cool on a wire rack for a few minutes before serving.
