  • 2 large eggs
  • 1 cup almond milk (or buttermilk)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper.
  2. In a large mixing bowl, whisk together gluten-free all-purpose flour, baking soda, ground ginger, ground cinnamon, and allspice.
  3. In a separate bowl, mix brown sugar and molasses. Incorporate eggs one at a time.
  4. Gradually combine dry ingredients with the wet mixture, alternating with almond milk, and stir until just combined.
  5. Pour the batter into the prepared pan and even out the surface.
  6. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow to cool in the pan for 10 minutes before transferring to a wire rack.
  8. Serve as is, or dust with powdered sugar or icing if desired.

Use room temperature ingredients for a better blend. Avoid overmixing and ensure your baking soda is fresh.
