- 3/4 cup packed brown sugar
- 1/4 cup unsulfured molasses
- 2 large eggs
- 1 cup almond milk (or buttermilk)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper.
- In a large mixing bowl, whisk together gluten-free all-purpose flour, baking soda, ground ginger, ground cinnamon, and allspice.
- In a separate bowl, mix brown sugar and molasses. Incorporate eggs one at a time.
- Gradually combine dry ingredients with the wet mixture, alternating with almond milk, and stir until just combined.
- Pour the batter into the prepared pan and even out the surface.
- Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack.
- Serve as is, or dust with powdered sugar or icing if desired.
Notes
Use room temperature ingredients for a better blend. Avoid overmixing and ensure your baking soda is fresh.
